		<description>Great article! I caught the cheese-making bug after visiting Switzerland in September and just recently started making my own cheese using a kit from www.cheesemaking.com. I was shocked at how easy it was to make mozzarella (their 30-minute variety). I&#039;m lucky enough to have local farms here in Connecticut that sell milk and cream in glass bottles -- my husband even uses them to make ice cream!
Thank you for including information about Kefir. I hadn&#039;t heard of it, but now that I have, I&#039;m fascinated. I&#039;m working my way up to making hard cheeses, but now I&#039;m definitely adding Kefir to my list of things to try. :)</description>
